What kind of cocoa powder you use can make a big difference in the quality and flavor of your mix. I love Anthony's Organic Culinary Grade Cocoa Powder. It does have more fat than regular cocoa powder but not a lot. In comparison 1 tablespoon of regular cocoa powder has .50 gram of fat, culinary grade has 1 gram. So not a huge difference in fat and it really adds a richness to the flavor. Once you try culinary grade cocoa you will not want to go back to regular.
Place all ingredients into a sifter and sift into a mixing bowl. Make sure all of the powders get well combined.
To prepare a single serving, measure out 2 tablespoons of the mix and 3/4 cup of rice milk into your favorite mug. Stir together and zap in the microwave for 2 minutes. Or bring to boil in a sauce pan.
Keep your mixture stored in an airtight container, like a mason jar.
To make this recipe into a Mexican Hot Chocolate, just add 1 teaspsoon of ground cinnamon, 1/2 teaspoon ground chili powder and 1/8 teaspoon ground cayenne
