Rustic red potatoes, green onions and chives mixed with a creamy, almost sour cream like vegan dressing, served warm. A great companion to a crock pot of beans or even baked beans.

Ingredients


  • 2 & 1/2 Pounds Red Potatoes (About 6 Medium Potatoes)
  • 5 Cups Filtered Water
  • 1 Cup Green Onions
  • 2 Tablespoons Chives


  • Dressing Ingredients

  • 1/2 Cup Unsweetened Almond Milk
  • 1/4 Cup Blanched, Slivered Almonds
  • 1/3 of a 14 oz. Block of Firm Tofu, Unpressed
  • 1/2 Teaspoon Coriander
  • 1/4 Teaspoon Black Pepper
  • 1 1/2 Teaspoons Salt
  • 1/2 Teaspoon Dry Mustard


Directions


Wash and scrub the potatoes and chop them into 1 inch cubes. Place in a large heavy pan with the water. Place on stove eye and bring to a boil. Once the water is boiling, cover and turn the heat down to between medium and high heat. Cook for 12 to 15 minutes or until fork tender. Drain and let cool for 5 minutes.

Next chop the green onions and chives and place them into the pot with the potatoes.

To make the creamy dressing you will need an immersion blender or food processor. Place the dressing ingredients into the food processor or immersion blender cup and blend until smooth. Pour this into the pot with the potatoes and onions and stir carefully so you don't break up the potatoes. Serve warm.
