Apple Cornmeal Cakes



These low fat, sweet cornmeal cakes are a great companion to vegetable soup or a crock pot of beans.



Servings:12. Per Serving (1 Individual Cake): 85 Calories, 1.75g Fat, 17g Carbohydrates, 1.36g Protein, 1g Fiber, 4.66g Sugar.









Preheat oven to 425 degrees.

In a medium sized mixing bowl mix all dry ingredients together, except the apple, add that after you've mixed all the other dry ingredients so that it coats the apple bits. In a small mixing bowl mix together all of the wet ingredients. Then combine the wet with the dry and stir until well combined. Pour equally into 12 baking cup cells or any kind of baking mold. Place in oven and bake 20 minutes. Great served with vegetable soup or beans from the crock pot.
