A vegan cream cheese frosting recipe that uses spices and vinegar to give it a cream cheese taste. A great recipe to have when you can't find vegan cream cheese or just don't like the taste of vegan cream cheese.

An important note about this recipe. You must use Earth Balance Original Buttery Spread because it has a higher fat content. If you try to use Smart Balance Light it will be too thin.

Ingredients


  • 3 Cups Confectioners Sugar
  • 1/8 Teaspoon Cardamom
  • 1/8 Coriander
  • 1/2 Teaspoon Clear Vanilla
  • 1/8 Teaspoon Almond Extract
  • 1/4 Cup Earth Balance Original Buttery Spread, Room Temperature
  • 2 Teaspoons Apple Cider Vinegar
  • 5 Teaspoons Almond or Soy Milk
  • Salt, Light Sprinkle


Directions


Place the powdered sugar, cardamom, coriander, vanilla, almond extract, butter, vinegar, soy milk and salt into a mixing bowl. With an electric mixer, mix together ingredients. Check the consistency of the icing. If it's too thin add a bit more powdered sugar. If it's not spreading well add a tad more soy milk.
