Seitan! Slice it, grind it, it can be used in a myriad of ways and in countless recipes. This is my version of the popular "wheat meat".

In a mixing bowl mix all of the ingredients together and knead for 2 minutes until it becomes elastic. Spread mixture out into 1/2 inch thick loaf.
In a heavy pan place broth ingredients and bring to a boil, place loaf into pan and turn heat down to a medium to low heat and cover, simmer for 45 minutes.
