Vegan Creamed Potatoes

This creamed potatoes recipe is vegan, creamy and healthy, but most importantly delicious. They're also easy!

Peel and chop the potatoes into 1 inch cubes and place them into a heavy pot. Fill the pot with water, 1 inch above the potatoes. Bring to a boil and turn down to medium high heat. Cook for about 20 minutes or until potatoes fall apart when mashed with a fork.

While the potatoes cook would be a good time to make the sour cream recipe, if you haven't already.

Now that the potatoes are cooked, save out a cup of water the potatoes were cooked in and then drain the potatoes completely. Add the sour cream, salt and 1/4 cup of the potato water. Mash together with a potato masher. If the potatoes are not creamy enough add a bit more of the potato water until you are happy with them.
