Vegan White Chocolate & Pistachio Candied Apples

Ingredients


  • Wooden Popsicle Sticks (or something similar)
  • 6 Medium Sized Granny Smith Apples
  • 1/2 8oz. Bag of King David Gourmet's White Choco Chips
  • 1 Heeping Cup of Roasted & Lightly Salted Pistachio Nuts


Directions


First take the popsicle sticks and lightly hammer them into the center of the granny smith apples. Depending on what kind of stick you are using, you may have to carve a point on the end of your stick to get it to go into the apple.

Secondly, place a piece of parchment paper about the size of a sheet pan on your work surface and spread the pistachio nuts out in a pile in the middle. Take a rolling pin and roll it over them to crush them up. Put them back into a pile in the middle.

Next pour the chocolate chips into a small microwave safe bowl and zap them for a minute to begin with. Take them out and stir them around and put them back in for another minute. Take them out and stir. If they haven't melted enough put them back in for 30 seconds. Use your own judgement, some microwaves are different. Be careful because these white chocolate chips can easily scorch and then you will have a brown mess.

Now that you have your chocolate melted roll an apple in the chocolate, making sure to cover at least 3/4 up the apple. You can help spread the chocolate on the apple by using a rubber spatula too. Now roll the apple into the nut pile. Lay the apple on the edge of the parchment. Repeat this process until you have the rest of the apples finished. Let the apples rest for an hour or until chocolate is hard again.
