Apple Cornmeal Cakes

    Dry Ingredients

  • 1 Cup Yellow Corn Meal (Not A Cornmeal Mix)
  • 1/4 Cup Whole Wheat Flour
  • 2 Tablespoons All-Purpose Flour
  • 1 Medium Apple, Peeled, Finely Chopped
  • 1/2 Tablespoon Baking Powder
  • 3 Tablespoons Sugar
  • 1/8 Teaspoon Nutmeg
  • 1/2 Teaspoon Sea Salt


  • Wet Ingredients

  • 1 Cup Rice or Almond Milk (Rice Milk makes them sweeter)
  • 1/2 Teaspoon Apple Cider Vinegar
  • 1/2 Tablespoon Agave Nectar
  • 1 Tablespoon Canola Oil
  • 1 Tablespoon Apple Sauce


Preheat oven to 425 degrees.

In a medium sized mixing bowl mix all dry ingredients together, except the apple, add that after you've mixed all the other dry ingredients so that it coats the apple bits. In a small mixing bowl mix together all of the wet ingredients. Then combine the wet with the dry and stir until well combined. Pour equally into 12 baking cup cells or any kind of baking mold. Place in oven and bake 20 minutes. Great served with vegetable soup or beans from the crock pot.
