Cool Mint Chocolate Pie

This cool and refreshing pie is the perfect summertime treat. Layered inside a graham cracker crust is a creamy chocolate mint pie filling, on top of that, a fluffy whipped topping. Both of these luscious layers created using thick, rich coconut milk. All topped off with a sprinkling of cacao nibs and drizzled with oozing hot fudge. Don’t get too freaked out about the fat content, a lot of it comes from coconut milk, which I’ve read is actually good for you. There is some hydrogenated fat in ready-made pie shells but you can always make your own. I tried making my own but never could get it right, and couldn’t find a recipe from another source that came close to ready-made. Once in a while won’t kill you.  : ) GO TO RECIPE >

Just a note to say I’m still alive. Although I haven’t posted any new recipes in about a month I’ve been working feverishly. Ok, maybe not feverishly, but I have been working — honest. I like to concentrate on the recipes, perfect them, photograph them, then load them into my database and release them slowly. I got new ones starting to go up next week. I’ve also been working passionately on a mvc mini site devoted to cakes. I’m hoping to have that up before the holidays start. I’m excited about that. Hope all of you are having a great summer.
