    Is the light unsweetened coconut milk you use, the one in the can? This looks really good!!

    I did used canned but I’m guessing the kind in the carton would work just as well.

    I know I should not be eating so late….but I simply could not resist. This is so good! I multiplied the recipe x5 so I can take it to church on Saturday. I used homemade rice milk in place of the almond milk and added just a little brown sugar since my milk is not very sweet. It is delicious. For those of us with soft tongues….go easy on the Tobasco! Yummmm!

    I love this recipe, i cant use coconut milk but extra almond does just fine. I also like to add a few cubes of vegetable stock and some nutritional yeast for a little extra flavor. This is so simple to make and my family loves it, i make a double batch just to have leftover for lunch the next day.

    I added a little bit more almond milk and a dash of leftover coconut milk I had — I also would have been more sparing with the spice and left out the tobacco. Normally I LOVE spice, but I’m used to a sweeter, richer corn chowder and this is a little bit more of a Tex-Mex corn chowder if you follow the recipe exact. Either way it’s great.
