    Delicious! I’m sure you’re right about the almond milk, but we have an allergy in the family, so we used rice milk. I must say, we’ve tried a lot of pancake recipes and I thought that I was just bad at making pancakes — but these were so perfect! Thanks a ton! Helpful note to anyone else attempting this recipe for the first time: double the batch!

    OMG it’s true!
    I tried your techniques and using almond milk instead of soymilk with a mix that I had used before and the result was dramatically better. No mediocre pancakes ever again!!!!!
    This was actually the first of your recipes that I’ve tried after just reading for a few months. Now I’m all excited about trying more. Thanks!

    I’ve been using the basic soy milk pancake recipe from Cooking With Peta for years. I tried this recipe and like it much better. The almond milk gives them a different flavor but a good flavor. I’ll use this recipe now. Thank you!

    We have made this recipe many times and love it. Lately I have used Kamut flour from our farmers market. It gives the pancakes a really interesting flavor and texture. We also add blueberries while they are cooking – best pancakes ever! Thanks again for the recipe.

    Cooked up beautifully, but a 1/2 tsp too much baking soda, not enough salt and sweetner. But they looked and rose beautifully!
