Vegan Brownies (Gluten & Soy Free)

Hi Josh -
I want to use ground flax instead of the egg replacer called for in the recipe but don’t know how much to use. How many eggs is 2T of egg replacer equivalent to?

Hey Caren, I’m not sure flax would work but you could try it. I’m thinking the brownies wouldn’t hold together the same or have the same texture. If you try it, post your results here. I’m curious.

Is there something you could use instead of the almond meal or flour if you don’t have any? I have raw almonds.

Do you have a food processor? You could make your own almond flour. I guess, haven’t made raw almond flour before. I’ve made it with blanched almonds.

I did try the brownies with flax. But I also made other changes – sorry, I can’t seem to follow a recipe as is. I used only 1/4 c brown sugar ( I don’t like things too sweet), low acidity olive oil instead of vegan butter, almond milk instead of coconut milk. I cut the brownies smaller because they are quite crumbly and I figured they would hold together better if they’re smaller. The texture is quite grainy – but that may be from the rice flour, I don’t know. The taste is great!

Caren, I can’t really comment as your recipe is completely different from mine. I’m not surprised yours came out crumbly though. Without the fat from the canned coconut oil and the extra sugar…

Is the coconut milk the canned kind or the refrigerated kind that you drink?

You should NEVER cook with ground flax seeds… the oils are very fragile and can be harmful to your body after heated. Only consume cold (reason they ware “cold” processed) ……these look mouthwatering

Is that really 2 tablespoons vanilla in there? Or is it suppose to be teaspoons?
