Cheezy Broccoli Orzo

A deliciously cheesey tasting broccoli and orzo dish. I created this recipe to mimic Rice-a-Roni’s Broccoli Au Gratin, a favorite of mine before I became vegan.
This dish is very quick. It will be on the table in less than 30 minutes. Only 5 grams of fat and packed with over 11 grams of fiber per serving! GO TO RECIPE>

Have made this twice already, with some modifications. It’s an excellent “cheese” sauce.

This was perfect. I added a little creole seasoning to the top to give it a little kick. I am new to this plant based way of living and I LOVE IT! Thanks so much for sharing your talent. I will be cooking your dishes all week to try them out.

Is it possible to use Soy milk instead of Rice milk? Thanks, all your recipes look great, can’t wait to try them!

Ann E, You could but I think it tends to give a weird flavor to the dish when soymilk is cooked.

16 cups of water, really? I’m afraid to try this recipe because it states 16 cups of water. Just want to be sure that’s correct. Thanks. Sounds yummy once I figure out the water.

Sara, all that water is to boil the orzo. You drain the water after they’ve cooked.
