Green Potato Salad

Low fat potato salad recipe using avocado and blended sweet peas for a mayo substitute. I know avocados have a lot of fat, but this recipe uses just enough (100 grams), but not too much. There is only 3 1/2 grams of fat per cup. And it’s plant-based healthy fat, so it’s guilt free. Sweet potatoes are so good for you and this recipe has plenty. You get 5 grams of fiber per cup as well. GO TO RECIPE>
