Gina, I tried the parchment paper today for the fries. For me they burned on the bottom and did not crisp up as good.

i tried cornstarch because i had some on-hand; it worked very well, and didn’t stick to the fries as i had feared.

i also added a little cinnamon, which enhanced the sweetness. i loved these: vegan, spicy-sweet, fat-free, full o’ potassium, but they totally tasted like junk food!

We had these tonight with supper and they were so delicious! By far the best homemade fries I’ve ever made. Thanks for the great recipe – I just love seeing my 3 year old daughter chow down on sweet potatoes!
