Jalapeno Poppers

A delicious and different jalapeno popper recipe. This vegan jalapeno popper recipe is different in a few ways. For one thing the jalapenos are blanched before baking them. This helps to make them more pliable before stuffing them and easier to bite into.     I have a question about the egg replacer in the recipe. I’d like to use Ener-G egg replacer (because I already have an open box), but I doubt the proportions would be equal. So how many eggs are you “replacing” with the Bob’s Red Mill, or do you know what the measurements would be for Ener-G?

    Also, thanks for a great recipe. I hate using store-bought cream cheese as well, so I’m much more willing to make this recipe than any of the others I’ve seen online.

    Karma Lily, hmm it’s not so much about how many eggs I am replacing but more about the consistency of the batter. You want the batter to cling to the jalapeno. I didn’t try these using Ener-G so I can’t say how that product would work differently. I may get some and test and have the option of using that.
