Creamy Shell Pasta With Spinach

This recipe was inspired by the manicotti stuffed with cheese and spinach. The difference is this dish is quicker and less cumbersone and of course vegan. I hate trying to get the cream inside the manicotti noodle. I guarantee if you work really fast this dish will be finished and on the table in less than 15 minutes. GO TO RECIPE >

    This looks very tasty. There’s a similar recipe in Vegan Vittles that I like, it calls for marinara sauce to be mixed in too for that whole pasta effect.

    I made this the other day and it’s very delicious! I’m having leftovers for lunch today. I may have used a little too much spinach but oh well, it’s good for me anyway!

    I too love stuffed jumbo shells or manicotti, but it’s so much work and hassle. Compared to the 30+ minutes it normally takes for me to make stuffed jumbo shells, I had this all made in 10 minutes as I blended everything up as the noodles boiled. Tres bien!

    I finally got around to cooking this tonight. It was totally delicious and even my omni hubby enjoyed it.. I didn’t have red wine vinegar so I used apple cider instead. When I tasted the sauce, before I added the spinach, I thought it might have been too salty or oniony but when the spinach was added, it was just right. Thanks for a fantastic recipe!

    I made this from this recipe before when I was not on a low-carb diet (just vegan back then) and I remember it was so delicious
    I’m going to try it again now, substituting for the pasta with cauliflower or something
