Low Fat Vegan Peanut Butter Cookies

This wholesome peanut butter cookie recipe trims the fat, calories and prep time. And the taste is divine. The only flour in this recipe is a 1/2 cup of whole wheat, but you would never guess. Don’t get out a sauce pan. And you can forget about dragging out a mixer. All you need is a mixing bowl and a spoon! It’s the perfect go to cookie recipe when you need a sweet fix and you’re too tired to work for it.

At my worst (200 pounds) I remember towards the end, right before I realized I had to do something about my weight I was on a peanut butter cookie making loop. The peanut butter cookie recipe I was making was insanely bad. They contained 1 cup of shortening, 2 cups of sugar (one white and one brown), 2 eggs, 1 cup of peanut butter and 3 cups of white flour. What the hell was I thinking? These days I can’t even imagine doing that to my body! And why would I or you? These are BETTER than anything with a bucket of shortening, in taste and texture.     I just put the first tray of cookies into the oven, and I am so excited! The dough tastes amazing. I didn’t have enough maple syrup, so I did 1/4 cup maple syrup and 1/4 cup molasses, and I really like the molasses flavor. Next time, I think i might do 1/3 cup molasses and 2 more tablespoons of apple sauce instead of the maple syrup.

    Caroline, do try making the original recipe with all maple syrup, the taste is much lighter and lets the peanut butter shine through. I think you will love it even more. :D

    OMG these are soooo good!!! I’m an avid baker and was looking for something for my kids that wasn’t loaded with butter and sugar. This recipe will go in my arsenal for frequent future use.

    Wow. Whoever calculated the FAT in these cookies can’t do math. I only added up the main fat ingredients (canola oil, peanut butter, flax seeds and whole wheat four) and the recipe has 70.8 g of fat!!! And you’re going to get about 8 cookies from this (I just made a variation of the recipe). SO THERE IS 8.85g OF FAT PER EACH COOKIE! not 2. Unless the person somehow made 35 cookies (they didn’t).

    Angry, it looks like you are correct, the fat grams are listed incorrectly. However, it DOES make 18 cookies if you follow the recipe exactly. I am working on re-figuring the nutritional information and will correct the database. I put a lot of work into this website and I try my best to make sure everything is correct but I’m human and I’m bound to make mistakes. I would give you your money back but hey, I don’t get paid. :D This recipe is still amazingly low fat when you compare it to other vegan peanut butter cookie recipes, which I invite you to do.

    Angry, I re-figured the fat grams and it’s 4 grams of fat per cookie, 3 if you replace half the flax with whole wheat flour and replace 1 tablespoon of the oil with applesauce. I tried it and it turns out a crispier cookie but very good. It wasn’t so much an error in my math as it was a typo. I must have had olive oil on my fingers when I was typing :O.

    great recipe! i didn’t have enough flax seed or apple sauce so instead i used a nice ripe banana and they turned out great! i also cut the sugar a bit because the banana was ripe and sweet

    I just tried these out and they are so good! They’re soft (as I like my peanut butter cookies) and so tasty!

    I altered the recipe a bit. I omitted the oil (didn’t have any) and replaced it with 2 tbsp unsweetened apple sauce, and I added 2 more tbsp of peanut butter.

    I also used only 1/3 cup brown sugar, and I used chunky peanut butter (yum!).

    It gave me 14 medium cookies (though they were pretty thick) at 100 calories each.

    I’ll definitely use this again!

    As a cookie fanatic, these were some of the most amazing cookies I have ever had…vegan or not. I was out of flaxseed so I added extra oatmeal and I cut back on 1/2 of the oil adding 1 extra tablespoon of applesauce. They are…should I say “were”…perfect. Thank you for a wonderful recipe!
